2008 Annual Chefs Competition

The annual Chef’s competition was held in October at Christ’s College in Cambridge. The competition aims to showcase the very best of College catering.

This year 12 different colleges were represented in the list of winners. There are seven classes that the Chefs can enter including Cold Starter, Hot main Course, Hot Vegetarian Main, Cold Sweet and three new classes, Afternoon Tea Fancies, Front of House Competition and Canapés.

The competition is judged by an invited panel. This year’s panel included Peter Griffiths, Director of Salon Culinaire, Richard McGloin, Chair of the University Caterers Organisation, Chris Oakes, Head Chef at Trinity College and John Jackaman from Infusions Ltd.

Bryon Franklin from Queens’ College entered for the first time this year and won three medals. He was awarded a silver medal for his main course dish of Roasted stuffed saddle of rabbit served with carrot puree and braised cabbage. He was awarded bronze medals for his starter of beetroot and goats cheese terrine served with apple walnut and chicory salad, and for his dessert of white chocolate cheesecake with raspberries. He commented that he was very pleased with his medals and will be entering again in this year’s competition.

The team at Sidney Sussex were awarded the Steward’s Cup for gaining the highest overall score in the competition and Jesus Miguel from Sidney Sussex was awarded Best in Show for his main course.
